Here I am about to go into week 2 of Whole30! So far I’m actually feeling better. I’m not sure if this is because I was “testing the waters” the week before I started and already trying to eliminate some things or if I’m just a freak of nature but it’s working whatever it is. I’m still definitely having cravings and I’m hungry a lot but I don’t count calories because that’s a whole other rabbit hole I won’t dive into right now. So I may need to watch my portion sizes going into the coming weeks and adjust for hunger or the latter, just getting way too excited about the next killer recipe I’ve whipped up and eating too much.
Overall though, I’m feeling like I can do this. I’ve figured out when I’m most tempted to reach for a processed snack and I’m trying to combat that with some Whole30 approved Larabars. Fun fact: When I was pregnant with my son, I had a major food aversion to Larabars that took some time to overcome even AFTER I had him but I’m enjoying them again. Might I add: the lemon bars are to die for? I just got a box from Thrive Market with my last order!
I’ve also started working out more consistently again. I have some race goals this year so I’ll tell you more about that in the coming weeks, but it was time for me lace up my running shoes and get back in the saddle at cycling. So the extra energy could even be from working out more because I feel 100 times better when I’m working out. Less likely to “kill all of the things” which by the way is a text book symptom of Whole 30 about now!
A few side notes, Day 4 I was craving salt, like I could just grab a salt lick and go to town cravings. If we’re being honest here I probably way over salted my sweet potato fries that night too but holy cow you need to try this recipe, it was crazy amazing! I love baked sweet potato fries but these were unlike anything I’ve ever had. I added them as a side to the Strawberry Mango Salsa Tilapia and OH MY GOSH, this was by far my favorite dinner of the week.

So what is in store for next week? Well I have great news if you own an instant pot! Every single recipe is instant pot friendly! Instant Pot lovers rejoice!
Now I just have to cross my fingers I can get to the grocery and this blizzard they are forecasting isn’t going to keep me from my Whole30 goals! Monday is going to be a super easy pre-prepped chicken salad that I’ve been having for lunch. The kiddos have swim lessons so I have to have something quick and easy. It’s a great idea to make a double batch of this and save it for lunches. There are several great recipes for chicken salad on Pinterest but make sure you watch your ingredients so it remains Whole30 approved!

Also, don’t forget to plan ahead (and add to your grocery list) Whole30 approved side items.
I haven’t included these because we usually op for some easy veggies or a side salad, but perhaps I’ll branch out and make something fun as a side this week. Let me know if you try something on the list!
